Simple Broiled Sole and Asparagus Rollups
| 11 ½ lbs. Sole fillets |
12 Asparagus spears (fresh, blanched) |
| 3 TB Virgin Olive Oil |
½ cup Bama Krab salad |
| 3 TB Italian Bread Crumbs |
Salt and Pepper to taste |
| 1 lemon (cut in half) |

Lay Sole fillets out on a large baking tray suitable for broiling. Season sole
with salt and pepper. Mix Krab salad with breadcrumbs. Place small amount of
Krab salad stuffing mix on each fillet. Roll up sole with asparagus spear in
middle to form bundle with Krab and asparagus inside. Drizzle Sole with olive
oil and season with salt and pepper. Place pan under broiler for 8-10 minutes
until done (cooking time depends on distance from heat source and quality of
broiler). Squeeze with lemon and serve immediately after removing from broiler.
