Cajun Stuffed Rainbow Trout with Zesty Fondue Butter
| 4 Rainbow Trout |
1 clove garlic (minced) |
| 6 oz. Bama Cajun Krab Dip |
2 TB Olive Oil |
| 2 TB Miracle Whip salad dressing |
¼ cup Heavy cream |
| 1 Green Onion (chopped) |
2 TB Butter (unsalted, sliced thin, cold) |
| ½ Tomato (diced small) |
¼ tsp. Lemon Zest |
| 2 tsp. Cajun seasoning |
¼ tsp. Orange Zest |
| Salt and Pepper to taste |

Preheat oven to 350 degrees. In a bowl mix Krab dip, Miracle whip, green onion,
tomato, garlic and 1 tsp. Cajun seasoning. Stuff trout with Krab dip stuffing
mixture and place in an ovenproof baking dish, rub trout with olive oil and
sprinkle with remaining Cajun seasoning. Bake stuffed trout in oven 26-30 minutes.
To make fondue butter: place cream, lemon and orange zest in microwaveable bowl,
cook uncovered in microwave for 3 minutes. Remove from microwave, whisk butter
into cream mixture until smooth, drizzle over fish to serve (stuffed trout can
be prepared in advance prior to baking to add convenience to your preparation).
