Grecian Grilled Salmon with Creamy Cucumber Dressing

4 Salmon Steaks (5-6 oz. each) ¼ cup Italian Dressing
2 tsp. Oregano  ½ tsp. Black Pepper (fresh grind)
2 Cucumbers (seeded, split lengthwise) 2 tsp. Garlic (granulated)
½ cup Yogurt (plain) 1/8 tsp. White Pepper
2 Lemons (cut in half) Salt and Pepper to taste

Marinate salmon steaks for 15 minutes in Italian dressing and oregano. Prepare very hot grill or charcoal fire. Remove salmon from marinade, season with salt and a pinch of black pepper. Place steaks on grill, cooking for 3-5 minutes each side until done. In a bowl, grate cucumber with coarse cheese grater, add yogurt, garlic and white pepper. Season to taste with salt (best made one hour before grilling fish). Serve grilled salmon steaks on cucumber dressing with lemon garnish to squeeze if desired.
