Hard Seared Halibut with Shrimp and Mushroom Compote
| 4 Halibut Steaks (5-6 oz. each) |
2 Green Onion (sliced) |
| ½ lb. Shrimp (31/35 ct. peeled) |
2 oz. White Wine |
| 3 tb. Virgin Olive Oil |
1 tb. Butter (unsalted) |
| 6 Mushrooms (Sliced) |
Salt and Pepper to taste |
Preheat skillet over medium-high heat. Season halibut steaks with salt and
pepper. Add 2 tb. olive oil to skillet heating until almost beginning to smoke.
Add halibut to pan searing both sides. Reduce heat to medium continuing to cook
until cooked through, approximately 3-4 minutes each side. When done, remove
from pan and reserve. Return skillet to stove, add remaining olive oil, heat
until almost smoking hot. Season shrimp with salt and pepper, add to hot skillet
sautéing until pink. Add mushrooms to pan, continuing to cook until mushrooms
are soft and shrimp are firm. Add white wine to pan, reduce liquid by ½ volume.
Remove pan from stove, add butter to shrimp-mushroom sauce wishing until smooth.
Pour over halibut steaks to set.
